Univariate data analysis of the TPA data (hardness, modulus of
elasticity, adhesiveness and cohesiveness) and the physical measurements
(volume, specific volume and weight loss) showed that
bread samples differed significantly for all parameters except
adhesiveness (Table 5). Further, products included twice in the
analysis (1 ¼ 6, 14 ¼ 16) obtained comparable results for all tested
parameters
