Adding of spice ingredients likely to inhibit the unwanted microorganism growth (Napha, 1991). The study found that all of these spice ingredients, except clove, didn’t inhibit bacteria growth. However, Clove can inhibit the contaminating microorganism growth, Bacilus sp, Aspergillus niger Mucor sp., Penicillium sp. And Rhizopus oligosporus. but it also inhibit bacteria growth too. From above, the result showed that all of these spice ingredients, except clove, are suitable to be used in Lug Bang producing.
