2.3. Selection of Korean turbid rice wine and verification for the
absence of the tested bacteria
Six commercial sterilized and non-sterilized Korean turbid rice
wines were selected according to their market share and sales
volume, and were then purchased from a local retail store (six
commercial products and three replications). Before performing
the experiments, the samples were checked to ensure that they
were not contaminated with the test bacteria (B. cereus, E. coli
O157:H7, S. Typhimurium, S. aureus, or L. monocytogenes). B. cereus
was detected in both sterilized and non-sterilized Korean turbid
rice wine, and about half of the samples were contaminated;
therefore, we extensively screened for this species and selected
wines that failed to produce presumptive colonies in the test
screens. The absence of contaminationwas confirmed as previously
described (Kim, Kim, & Rhee, 2013).
