2 Materials and methods
2.1 Plant material and chemicals
Broccoli (Brassica oleracea var. Italica, cv. Cicco) heads were obtained from a local producer in La Plata, Argentina and immediately transported to the laboratory for processing. The heads were separated into florets and then immersed in chlorinated water (150 mg/kg sodium hypochlorite) for 15 min at 15 °C.
Chemicals were obtained from Sigma Chemical (St. Louis, USA) and Merck Química (Buenos Aires, Argentina).
