This is due to the fact that milk has a white
opaque colour that could interfere with the TTI's transparency.
Considering the data in Table 4, it can be seen that parameter a*
(green e red axis) from the CIELab scale had values within the
range which comprises the colour red, while at pH 4.6 it showed a
maximum value for the TTI of 19.82 ± 0.08 for parameter a*.
