The headspace O2 and CO2 composition for the different
packaging conditions was not significantly influenced by coating
application if compared to the uncoated samples (water-dipped),
except for the CO2 concentrations of the artichokes packed under
passive MAP conditions (MA-P). Under this MA condition, the
CO2 values in the coated artichoke slices were higher than in the
uncoated samples, which indicates a slightly increased respiration
rate due to coating application. Oms-Oliu et al. (2008a) also
described that uncoated melon exhibited a lower modification in
internal atmosphere than those pieces coated with gellan-, pectinor
alginate-based formulations at the end of storage. Among the
different polymer-based coatings, gellan coating modified the gas
concentrations in the package headspace atmosphere to a greater
extent, and changes were attributed to the respiratory activity of
gellan-coated melon rather than to coating gas barrier properties.
In our case,the low O2 concentration reached under MA-A and MAP
may also affect the respiratory activity of coated artichoke pieces
by increasing the CO2 level in the package headspace.
