The unsaponifiable matter corresponds to compounds present in oils which after saponification with alkaliare insoluble in aqueous solution. These compounds may include impurities, such as mineral oil or substances naturally present in oils as sterols, tocopherols and carotenoids. The pulp oil showed9.59% of unsaponifiable matter content, significantly higher thanthe seed oil (1.83%), whose value lies near the content presented by the seed oil of Phoenix canariensis (1.79%)
