using a high shear mixer for homogenization. This is
the first time that the influence of the sample preparation
procedure has been evaluated for the determination
of nitrite and nitrate in meat samples. The technique
showed good migration time and area repeatability,
excellent linearity, and adequate accuracy. In comparison
with other standard methods, the proposed CE method
has the advantage of not requiring a nitrate reduction
step procedure since the determination of nitrate and
nitrite is carried out simultaneously, which reduces the
generation of toxic residues and decreases the total
analysis time. The method could be readily employed
for the analysis of sample matrices including vegetables,
potable water and river water, as well as other
environmental materials.
