The abilities of the strains to grow in the presence of different
concentrations of NaCl were determined according to
Pancheniak and Soccol (2005). Each strain was inoculated after
overnight growth in MRS broth (3%, v/v) containing 0.05% (w/
v) CYS with 3, 6 or 10% (w/v) NaCl. Cultures were incubated
at 37 °C, and the absorbance was measured at 660 nm after 0,
4, 8 and 24 h. Results were expressed as a percentage growth
inhibition in the presence of NaCl compared to a control culture
grown without NaCl.
