The anti-inflammatory effects of cell supplementation with cookies
made with Italian khorasan and KAMUT® khorasan flours were even
more evident after LPS stimulation. These findings are in agreement
with previous in vivo results; in fact, in a previous work performed on
rats fed with KAMUT® khorasan wheat pasta or modern durum wheat
pasta we observed histological modifications in the lymph nodes and
spleen, and morphological alterations of the intestinal villi that were
suggestive of an anti-inflammatory effect of KAMUT® khorasan components
compared to an inflammatory effect of modern durum components
