Native mung bean starch exhibited the ‘A’ type crystalline pattern and showed a weak diffraction peak at 5.7° 2θ and two board peaks at 16.9° and 19.7° 2θ. Compared with native starch, the heat-moisture treated starch had more intense diffraction peaks at 16.9° and 22.9° 2θ. Moreover, the HMT starch showed new diffraction peaks occur at 15.0° 2θ, plus an unresolved doublet between 16.9° and 17.5° 2θ.
