complementary have their respective limits: water activity
is a thermodynamical property linked to water availability
defined at equilibrium. Foods, on the other hand, are mostly
heterogeneous in composition and may not be in a state of
equilibrium while glass transition temperature relates to the
relative molecular mobility of water between glassy and rubbery
states
