Stability at different temperatures and pH. The CSF of
Lact. plantarum TF711 was exposed to various heat
treatments: 30 min at 30, 60, 80 and 100C or 20 min at
121C (autoclaved).
In order to determine the sensitivity of the bacteriocin to
pH, the supernatant recovered during stationary phase
growth of Lact. plantarum TF711 was adjusted to pH levels
ranging from 1 to 14 (intervals of 1Æ0). After incubation at
37C for 4 h, the pH was readjusted at 6Æ5 and the
supernatant was concentrated to 1/10 of its original volume
before determining the residual antimicrobial activity
