3.1.3. Storage
In stored samples, there was an increase in the number of
xerophilic species of Eurotium such as E. amstelodami, E. chevalieri
and E. rubrum. Aspergillus penicillioides was primarily isolated at
this stage, reaching up to 100% of infection in some samples. The
water activity decreased from 0.85 to 0.40 . A small
increase in the diversity of the species Aspergillus and Penicillium
was noticed. The number of yeasts and G. candidum suffered
a drastic reduction, while Abs. corymbifera persisted
