Eight standard alcoholic beers and their low-alcohol counterpart
beers of eight different Spanish commercial brands were obtained
from the local market. The alcoholic beers contained between 4.5%
and 5.5% alcohol. Among the low-alcohol beers, three had less than 3%
alcohol (known as low-alcohol), and five had less than 1% alcohol
(known as alcohol-free). Concerning pH values the mean was 2.9 with
no significant differences between types.
The samples of beer fromcans of 330 mlwere placed in 250 ml glass
bottles and were frozen at −20 °C to minimize the gas content and to
preserve the volatile compounds. Previously to chromatographic analysis
the samples were defrosted at 4 °C.
