At trial initiation and through out the experiment milk
was sampled on alternate days (a.m. and p.m. separately) for
determination of organoleptic acceptability. Three trained
personnel at the Cheese Division of Saputo Inc., Burnaby,
BC, Canada, located at Glenwood, AB, assessed changes in
milk characteristics due to initiation and continuation of
provision of fenugreek seed in the diet. Milk samples from
the cows fed C-TMR were pooled for each sampling time
(a.m. and p.m.) and a representative sample from the pooled
sample was evaluated (n = 20) by a panel of experts. The
a.m. and p.m. samples (n = 60) from each individual cow
fed the F-TMR were evaluated. Members of the expert panel
independently evaluated milk samples assigned serial numbers
from 1 to 80. The panel of experts assigned values of 0
(abnormal) or 1 (normal) to each sample through subjective
evaluation. Each raw milk sample was tasted to assess
sweetness, saltiness, bitterness or rancidity. Milk samples
were evaluated for any abnormal, oxidized or unnatural
aroma or off flavour and visually inspected for any evidence
of blood or other abnormalities such as thickness, stringyness
and uniformity of colour.
