Freshness grades of raw Mediterranean horse mackerel
and blue jack mackerel are shown in Figs. 1 and 2, respectively.
On Wrst day of ice storage a higher percentage (63%)
of the Mediterranean horse mackerel was recorded as E
grade than blue jack mackerel (45%). Grades of raw
Mediterranean horse mackerel characteristics remained
excellent to very good (grades E and A) even on day 4 of
storage, whilst no blue jack mackerel batch had scores in
the E grade category on fourth day of ice storage. On sixth
day of ice storage, the majority of Wsh were scored as B
