At 100 °C, a* showed a descending trend similar to that of L* as heating proceeded ( Fig. 1c). However, at 80 °C and 90 °C, a* slightly changed within 50 min. This result implies that a* is more stable than L* at high temperatures.
These results suggest that Ab510 is more sensitive to temperature than L* and a*, and that a* is more stable than the others at heating temperatures. Some anthocyanins might be negatively affected by the thermal treatment during processing, but it does not evidently affect visual color attributes.
