Titratable acidity of milk samples was determined as per IS: SP: 18, Part XI (1981).
2.2.7.3. Absolute viscosity
Absolute viscosity of milk samples at 27 °C was measured with an Ostwald viscometer as described by Lewis (1996). The density of samples at 27 °C was analysed using pycnometer. Temperature was maintained exactly at 27 °C in thermostatically controlled transparent glass water bath. The absolute viscosity was calculated according to equation
