The less dented surface of maltodextrin comparing to modified tapioca starch could be attributedto the difference in sugar composition. Maltodextrin used in this study had DE of 24. Therefore, it consisted of a greater amount of low molecular weight sugar. These low molecular weight sugars may act as a plasticizer preventing shrinkage of the surface during drying. According to plasticizer is important for the formation of spherical microcapsules with smoothsurface. Bruschi et al.
