In the case of cold setting,
sample packs were directly kept in the refrigerator at 4 °C
overnight for proper setting. De-moulding was done after
setting process and the products were immediately wrapped
with a food wrapper (Saran Kl in wra p) and stored in the
refrigerator (4 °C) for 11 days. Analysis of samples was
done at an interval of 2 days during the storage period
