uniformity of the cap surface and the presence of dark stains on the
cap in cinnamaldehyde treated samples. These results suggest that
cinnamaldehyde fumigation treatment was more effective in
retarding mushroom sensory deterioration. Considering the development
of the evaluated sensory attributes, mushrooms treated
with cinnamaldehyde showed the lowest deterioration rate, followed
by those treated with thyme and finally those treated with
clove and the control treatment
