The hydrolysis products of soluble starch were analyzed by TLC at various time points of digestion as shown in Fig. 4. Maltose (G2), maltotriose(G3), maltotetraose (G4) and a small amount of longer maltodextrins were formed at the early stage of hydrolysis. As the reaction proceeded, G4 and maltodextrins were further hydrolyzed, and glucose (G1), G2 and G3 became the final products after incubationfor 7 h.
