Saccharomyces cerevisiae is a species of yeast. It is the most useful yeast (most useful microorganism) and the most intensively studied eukaryotic model organism in molecular and cell biology. The organelles within the cells of S. cerevisiae have been the research focus of many research laboratories. Yeast mitochondria have received particular attention and have been the foundation of the basis of dysfunctional mitochondria and its medicinal aspects. S. cerevisiae is also a critical microorganism in the production of many foods and alcoholic beverages.
