The preparation of modified rice flours samples
1 ) Dry milled (DM) rice flour: Thai Khao Dawk Mali 105 (KDML 105) was dry-milled by hammer mill
(model ZM 1 , Retsch, Germany), and then sieved through a 100 mesh.
2) Commercial pre-germinated brown (PGB): rice flour Thai Khao Dawk Mali 105 (KDML 105) was
obtained from Mah Boonkrong Plus Co. Ltd, Thailand. Next, it was dry-milled by hammer mill (model ZM 1 ,
Retsch, Germany), and then sieved through a 100 mesh.
3) Heat moisture treatment (HMT) rice flour: HMT of rice flour sample was carried out by using the
method of Chaichaw and Naivikul (2009). An exactly known moisture content of rice flour sample was
