Cao lau is a fresh and tasty regional Vietnamese dish, found only in Hoi An. The dish comes with thick and chewy short noodles, fresh green leaves, crispy pork, basil, mint, chilli peppers and lime. There’s not very much broth in this dish as the emphasis is on individual flavours - so simply mix it up and enjoy with an ice cold glass of Vietnamese style iced coffee or ca phe - which is served over ice with a squeeze of condensed milk.
