Principal Component Analysis (PCA) was performed using Statistica 6.0 for Windows (StatSoft) software.
A Three-way ANOVA, with the factors yeast, storage time and temperature was used to identify significant differences among the samples in the volatile, chemical, and sensory profiles. Significant means were separated using the LSD Fisher's test (p < 0.05). A One-way ANOVA was performed to evaluate significant differences among the different yeasts at t0. The software used to perform the ANOVA analyses was Statistica 6.0 for Windows (Statsoft).
