The changes in viscosity can vary depending on the ultrasound intensity.
Food viscosity may either increase or decrease and this effect
may either be temporary or permanent. Since cavitation causes shear,
a temporary decrease in viscosity is observed in the case of thixotropic
fluids. If enough energy is applied, a permanent viscosity reduction is
observed due to changes in the molecular weight (Soria & Villamiel,
2010).
