Verification is the most effective and reliable method in order to detect whether the HACCP system operates in accordance with the established plan. Verification should be conducted at regular intervals. It must demonstrate that all measures and methods are applied as planned. Estimated risks clearly indicated that in both bakeries the verification was poorly carried out, which could be of critical (in the bakery A) or high (in the bakery B) importance for food safety. Similar results were obtained by Czarniecka-Skubina & Trafialek (2011) where the nonconformities related to the verification of the system was shown
