The particle size distribution of the samples was measured by
laser light scattering (Mastersizer 2000, Malvern Instruments,
Worcestershire, UK). Emulsions were again diluted with appropriate
buffer solutions to avoid multiple scattering effects. The mean
particle diameter was calculated using: D32 ¼ PniD3i

indices of phosphate buffer solution and fish oil were taken to be
1.330 and 1.481, respectively.
