3.3. RIV of combined treatments against L. innocua in green beans
A comparative evaluation of antimicrobial activity in term of
RIV of the two non-thermal treatments tested in combination with
bioactive coating against L. innocua on green bean samples is
reported in Fig. 2.
The combined treatments based on PL and coating application
showed a slight antagonistic effect, with a progressive reduction of
the antimicrobial activity during 14 days of storage. In contrast, the
combined treatment of HHP and bioactive coating showed a strong
synergistic effect in the early days of storage, but rapidly decreased
to values around 1 after 4 days of refrigerated storage, thusconfirming the absence of a strong residual antimicrobial activity
against L. innocua on green beans
