The results of inulin extraction by different conditions were shown in figure 2. The conventional extraction was conducted by heating JAT solution on a hot plate stirrer until reaching the temperature of 85 °C which took heat-up time of 35 min. The extraction by ohmic method by using different voltage levels (100, 150, 200 V) required dissimilar heat-up times to the temperature of 85 °C as presented in figure 2 and Table 1. The higher voltage obviously resulted in the shorter heat-up time.
