Hence, taking into account relations from previous curves (Fig.7 and Fig.8) over the range of water content from 3,8 to 0,3 (kg water / kg.ds) and temperature values ranging from 50 up to 80°C, our findings are quite similar to those reported by [17] who found that the water diffusivity of grape varies between 3,8210-10 (m²/s) and 12,810-10(m²/s).
