For this purpose, microbial load (total
aerobic mesophiles,enterobacteriaceaeand yeasts and moulds) and
physicochemical parameters (pH, titratable acidity, total soluble
solids, browning degree and cloudiness) were quantified, and the
results compared with storage at 0.1 MPa, maintaining all other
storage conditions. Samples were also stored under refrigeration
(4
C), to compare hyperbaric storage with refrigeration.
