Various studies indicated that the colour of honey could be determined by the subjective (sensory) and objective (instrumental) methods (Terrab et al.,2002). The instrumental methods most commonly used for honey colour evaluation are the CIE L*a*b*tristimulus method,absorbance measurements and simple colour grading after Pfund (Bogdanovet al., 2004; Terrab et al., 2002; Bertoncelj et al., 2007).
