The incorporation of BPF with the addition of CMC yielded a significant (p < 0.05) increase in the SDF (2.35%) over the other samples (1.31–1.89%). Soluble dietary fibre acts as a sponge and absorbs water in the intestine; it mixes with food to form an entangled network and slows the rate of digestion and absorption ( Dreher, 2001). Additionally, several studies have demonstrated that the inclusion of highly viscous soluble fibres, such as alginates, guar gum and β-glucan, can reduce the blood glucose response ( Sierra et al., 2001).
