The use of probiotic bacteria for the prevention and treatment of intestinal disorders has been suggested for many years (Rolfe, 2000). Areas of health improvement due to probiotic consumption range from combating gut inflammatory diseases, to the prevention/alleviation of allergies and increased protection against infectious (viruses, bacteria,
fungi) as well as non-infectious (e.g. cancer) diseases (reviewed
by Cross, 2002). Accordingly, modification of the human intestinal
microbiota to incorporate probiotic (exogenous) species has become
an important objective in nutritional science, and food manufacturers
have responded by developing a range of functional
food products. Although probiotic bacteria can survive transit of
the gastrointestinal tract, some studies have shown that they do
not colonize and grow during short or even after prolonged feeding
periods (Klaenhammer, 2000; Tannock et al., 2000). As a consequence,
there is a need for complementary strategies that promote
growth of these desirable lactic acid bacteria in the colon
