The concentration of trans-ferulicacid and some of its derivatives increased in SSF and NF extracts (Tables 2 and 3), whilst they decreased significantly (P 6 0.05) in LPF samples (Table 3). The novo synthesis of hydroxycinnamic acids such as p-coumaric and ferulic acids in fermented legumes has been described previously (Dueñas
et al., 2005).
