At least a ratio SDF/TDF of 0.3 favors the physiological characteristics of the SDF, such as reducing the absorption of blood glucose, resulting in better control of insulin secretion, and increased intestinal peristalsis, production of short chain fatty acids during colonic fermentation, and maintenance of a healthy intestinal ecosystem, among others (Lunn and Buttriss 2007; Sáyago- Ayerdi and Goñi 2010).
