The effect of different hydrocolloids on dough mixing properties was investigated by a Brabender farinograph (OHgG, Duisburg, Germany).
A 150 g of rice flour sample supplemented with the major components of the glutenfree formulations (corn starch and sodium caseinate) and each hydrocolloid at 2% level were loaded in the farinograph.
