Lime (Citrus aurantifolia) is a citric fruit used worldwide in cuisine and belongs to the Rutaceae family. The essential oil of lime is extracted mainly by steam distillation for obtaining a mixture of bioactive compounds with benefit properties. In folk applications, limes were used to relieve common cold, flu, and other diseases. Other usage of this oil has been applied in the food industry to assure safety and quality in processed products. In addition, it has been used for its organoleptic properties as a food additive to impart citric flavor and odor in novel foods. Furthermore, its components have antioxidant potential to stabilize free radicals, and antimicrobial potential to inhibit the growth of pathogenic and spoilage microorganisms. For these reasons, lime oil is well appreciated by the food industry.
