Fish and seafood are among the most traded food commodities worldwide. Optimal consumer protection for fish and seafood requires the implementation of science-based good practices encompassing monitoring production and harvesting areas, process, and product certification and traceability. This article provides an update on the major fish and seafood safety issues and how to manage them from harvest to distribution. It draws on the extensive international work by the Codex and by the fish and seafood control authorities of the countries that play a major role in this trade.
