Small and large deformation properties of mixed gels were
compared by plotting the final storage modulus (G0
) after cooling to
25 C verses fracture stress (Fig. 7). The Pearson correlation coef-
ficient between gel firmness (G0
) and gel strength (fracture stress)
was 0.85. Carrageenan continuous gels, independent of their ionic
strength, were the only group decreasing this correlation. These
gels were lower in gel strength but higher in gel firmness.
