Applications of active metabolites of marine microorganisms for food and pharmaceutical products (Fig. 1) have just started the journey.
The health claims of novel metabolites that have been mentioned in this chapter are acquired only through in vitro and in vivo studies and thus, comprehensive studies on mode of action, biological consequences and possible side effects have to be
conducted in order to use those materials as food ingredients.
On the other hand, there are a number of legal barriers to be addressed when developing marine microorganism-derived ingredients as a food supplement.
