In conclusion, this work demonstrated that the employment of a Celluclast 1.5L enzyme is a fast, feasible and effective method to extract proteins from olive leaves. Several parameters affecting Celluclast 1.5L assisted extraction of proteins were optimised, e.g., organic solvent percentage, Celluclast 1.5L concentration, pH, and extraction temperature and time. It was found that the use of Celluclast 1.5L improve the protein extraction, which is due to the breakdown of the cell wall rendering the intracellular materials more accessible for extraction. The mild extraction conditions were environmentally sustainable and faster than other protocols described in the literature. In addition, electrophoretic protein profiles from diverse genetic varieties were evaluated finding differences, which could be useful to classify the olive leaves
according to their genetic variety
