Banana chips are preparation by the bananas were washed, hand-peeled and cut into strips,washed with water and All pieces were fried. frying generally occurs at high temperatures under atmospheric pressure causing the absorption of a high amount of fat, which could be up to 50% of the total weight of the fried food. The oil absorption which occurs during the first frying period at the same time as water evaporation occurs.
A high oil content in fried banana chips shortens the shelf life of the product and causes a decrease in product acceptability to consumers.
Besides,a high oil content in fried banana chips has become a health problem associated with obesity and coronary heart disease.
