Soybean meal (SBM) are widely used by the food and feed industries
as protein source because of high content of protein and
relatively well-balanced amino acid protein compared with other
vegetable sources. The major soy proteins are glycinin and betaconglycinin.
While raw soybean has many anti-nutritional factors
such as trypsin inhibitors (TIs), lectins, allergens, phytin, and nondigestible
oligosaccharides, other kinds of soy-based protein
products, including SBM, extruded soybean meal, soy protein
isolate, and soy protein concentrate have relatively low concentrations
of these factors. These protein products can be used by
human and animal feeding after proper treatment during processing
(Anderson & Wolf, 1995; Cervantes-Pahm & Stein, 2010;
Pedersen et al., 2008).
