A properly designed and functioning microingredient system must accurately weigh additives into a scale. Accuracy to within 0.01 pound or less (5 grams) is certainly possible, although practical use is usually set at 0.05 pound (22.7 grams). Scales frequently used may be in the form of a rotating drum or stationary hopper. Regardless of design, the scale should discharge completely, reducing the chances for carryover between batches (Ferguson, 1991).
