Hygroscopicity
The hygroscopicity of the spray dried powders was determined according to the method proposed by Cai and Corke (2000), with some modifications. Samples of each powder (approximately 1 g) were placed at 25 °C in an airtight glass container with NaCl saturated solution (75.3% RH). After 1 week, the samples were weighed and
their hygroscopicity was expressed as g of adsorbed moisture per
100 g of dry solids (g 100 g−1).
