Reaching their prime in late autumn-winter, and weighing up to 20-30kg,ara are large fish, with flavor suited to sashimi, simmering, broiling, or in naba(one-pot)dishes. Firm-fleshed for it size ara does not lose this firmness or becomes watery over time, and suffers minimal discoloring. The large chunk of meat reaches its pinnacle of flavor after about three days’ aging. Like other deep-sea species it contains a generous proportion of fat, but unlike other white fish, in which delicacy is deemed a merit, ara offers greater sweetness and flavor with each successive bite.
